Avocado Corn Salad

Ingredients:

  • 3 ears of corn
  • 2 avocados
  • ½ red onion
  • ½ bunch of cilantro
  • 2 Tbsp extra virgin olive oil
  • 2 limes, juiced
  • 2 Tbsp honey
  • 1 tsp salt

Recipe yield is 6 people as a side salad.

Instructions:

Salad:

  1. Boil or grill the corn, cut kernels off the cob, and chill.
  2. Dice avocados and red onion.
  3. Chop cilantro

Dressing:

  1. Whisk together olive oil, lime juice, honey and salt in a bowl.
  2. Combine all ingredients in a large bowl and gently toss with dressing.
  3. Enjoy as a side salad, or as a topping to any of your favorite entrees.
