Ingredients:
- 3 ears of corn
- 2 avocados
- ½ red onion
- ½ bunch of cilantro
- 2 Tbsp extra virgin olive oil
- 2 limes, juiced
- 2 Tbsp honey
- 1 tsp salt
Recipe yield is 6 people as a side salad.
Instructions:
Salad:
- Boil or grill the corn, cut kernels off the cob, and chill.
- Dice avocados and red onion.
- Chop cilantro
Dressing:
- Whisk together olive oil, lime juice, honey and salt in a bowl.
- Combine all ingredients in a large bowl and gently toss with dressing.
- Enjoy as a side salad, or as a topping to any of your favorite entrees.
